I have been wanting to make avocado popsicles ever since I got my popsicle tray at World Market. I found a healthy avocado pop recipe and altered it in a few ways, also adding ground coffee. When you take these out of the freezer, they smell like chocolate coffee (winning!) and the handstamped smile sticks are intentional as can be! Creamy and made of natural products, you can’t go wrong turning to one of these Coco Coffee Pops when your sweet tooth gives in.
Natural ingredients | Vegetarian | Paleo | Gluten Free
- 1 medium hass avocado
- 1/4 cup carob powder
- 1 can coconut milk
- 6 Tbsp pure honey or to taste (taste the mixture after blending to ensure it’s to sweetness you prefer)
- 1/8 cup ground coffee
- In blender, add ingredients in this order: coconut milk, avocado, honey, carob powder, coffee
- Blend until smooth, scrape with spatula and pour into popsicle molds, placing sticks in last
- Let freeze 8 hours
- To take pops from mold, put under hot water for 30 seconds and shimmy out
To make the smile sticks, get any long stamp with word from Hobby Lobby or your local craft store and color ink you like, take two popsicle sticks and glue the inside edges and connect. Let sit for 3 minutes or until dry and stamp the stick.
