I created this one evening when I had a craving for Avocado and Chicken. I usually eat them together with salsa but had a tough workout and wanted to get more complex carbs in for Recovery. So, I grab the Pinto Beans (may sub any beans), pre-made shredded chicken and pre-made Basmati Rice, added a little salt & pepper and the main ingredient that makes this party hoppin’: Srirachi Sauce!
It is a hit in my house and I eat it a few times a week. It’s a healthy staple and other than the sodium in the Srirachi, it’s slammin when it comes to a healthy meal with all the healthy macro nutrients in one bowl! Plus, if you’re busy or an on the go person and don’t have a lot of time to prepare meals…just throw together your pre-made ingredients from Sunday and it’s done!
What you’ll need:
1-2 cups Basmati Rice pre-made
1 cup Pinto Beans /Northern Beans are good too/any beans you like (cook if dry beans or buy beans already cooked in glass jars are best)
chicken breast cooked
salt & pepper
I take a pan and mix in 1-2 cups of Basmati Rice already cooked (may use brown rice too), pre-made shredded chicken, pinto beans drained (if you find them in a glass jar, I prefer the juices from the beans to add to this to heat on stove…about 1 cup and then re-heat on the stove by adding a little water to the mixture. Heat on low for 10 minutes or until warm or use microwave if you’re pressed for time or at work. Then, mix in Srirachi Sauce to your heat level liking and mix it all together. Top with chopped Avocado (I use 1/2 avocado per bowl), salt and pepper and enjoy the party in your mouth!
*If you want to make a big batch, just quadruple the amounts and then put into Tupperware for the week!
