Super Easy {Gluten Free} Banana Muffins

It’s no surprise in my house when a bundle of bananas turn brown or the lemons start growing little hairs. {insert eek face}

I take full responsibility for being the over shopper of the household. I tend to go overboard on what I think we need and just can’t seem to find that fine balance between what to get and what we actually eat each week.

There’s always a positive in every going-rotten piece of fruit.

Last week, the bananas were going bad and I don’t know about you, but I just can’t bring myself to eat a soft, frumpy brown banana. It’s squishy, pasty and I can’t really put peanut butter on it without it having a firm place to land. The good news is, it’s these very bananas that make THE BEST banana baked anything!

Aside from the new gf peanut butter cookies I make when I have a sweet tooth, these are my new go-to.

These are the perfect muffins for on-the-road or on-the-go! If you have a sweet tooth, these are a healthier alternative to a candy bar or making cookies. They do pack a punch of calories in each one so just be mindful. They’re the perfect mid day snack for me right before my daily walk. AND, they keep my sweet tooth at bay for a girl whose got goals.

The other great thing is, these are SO EASY TO MAKE. Throw most of the ingredients into your blender and rock and roll. Let’s get this party started.

Super Easy {gluten free} Banana Muffins

  • 2.5 cups almond flour blanched
  • 1/2 cup honey {4 ounces}
  • 2 eggs
  • 1/3 cup Greek Yogurt
  • 3 overly ripened bananas
  • 1 tsp vanilla
  • 1 tsp baking soda
  • cinnamon
  • 1 tsp salt

*optional ingredients:

  • 2 scoops vanilla protein powder (add 1/4 cup unsweetened almond milk if so)
  • walnuts (although this recipe has higher fat content already due to the almond flour used)
  • nutmeg

  1. Preheat oven to 350, spray a muffin pan with coconut oil spray
  2. In a blender, add bananas, yogurt, honey, vanilla and eggs. Blend well
  3. In a separate bowl, mix almond flour, baking soda, salt and cinnamon until combined
  4. Add the wet mix to the bowl, stirring until everything is combined
  5. Using a 1/2 measuring cup, scoop out batter into muffin tray, filling all the way to the top
  6. Add a small sliced banana bite to the top of each muffin
  7. Bake for 20 or so minutes. Everyone’s oven is different, so just check on them. Once they’re slightly browned on top, they should be good to go.
