These pancakes are special. Made from a single egg and a small banana, they are bliss added to your day! I decked them out by slicing thinly the last 1/4 of a normal sized banana, adding some walnuts and finally chia seeds. Chia seeds are full of fiber, healthy fat and antioxidants and I usually add 1 tsp on my banana pancakes. They don’t have a distinct flavor, in fact, it’s the texture of them that adds so much to each bite. You can get my favorite kind of chia seeds here.

- 1 small banana
- 1 medium sized egg
- Mash banana with a fork (make sure it’s a small banana not a large one), then add egg and use fork to mash and mix all together. Heat saucepan on medium heat, spray with olive oil spray or put coconut oil in pan and pour batter in pan. Spread batter around and turn heat slightly down between low and medium. Let the pancake sit and with a spatula, see if it is flippable. If so, flip and let sit on the other side on low/medium heat for 3-5 minutes or until golden brown. Add walnuts, sliced banana and chia seeds!
