Healthy Kale Caesar Salad with Toasted Garbanzo Beans

IMG_1274This Thanksgiving, I wanted to do something totally off the wall to what I normally do for my parent’s Thanksgiving {just show up!} so I chose to make a healthy salad as I have been making a conscious effort at incorporating more greens and vegetables in all my meals. When I found a healthy Caesar Salad Recipe with toasted garbanzo beans, I knew that would be the one I would take with me. I marched to my local Whole Food’s Market and picked up the fresh ingredients and went to work. Although there were leftovers, my stepmom asked if she could keep the rest as she loved it! It was so nice sharing something healthy and while enjoying the Thanksgiving meal, I gave thanks for family, friends and my health.

Healthy Kale Caesar Salad with Toasted Garbanzo Beans

Ingredients
  • Head of Kale or two heads if for large group
  • 1/4 cup fresh grated Parmesan Cheese
  • 15 ounce can organic garbanzo beans
  • 2 tbsp olive oil
  • 1/2 cup greek yogurt + 1/2 cup OPA Greek Yogurt Bleu Cheese Dressing
  • 1 tsp dijon mustard
  • 1 garlic clove
  • 3 tbsp fresh squeeze lemon juice
  • 1 tsp worcestershire sauce
  • salt & pepper
Instructions
  1. Kale-Take stems off, roll the kale up by leaf and thinly slice into strips, put in bowl and set aside or in fridge
  2. Toasted Garbanzo Beans-Preheat oven to 375 degree. Drain and rinse can of garbanzo beans. With hands, take off peel to each garbanzo beans (takes about 10 minutes), place on paper towel and dry off. Place on baking sheet, spray with olive or coconut oil spray and top with salt & pepper. Put in oven for 40 minutes.
  3. Greek Caesar Dressing-In blender or with hand blender, put 1/2 cup of greek yogurt, 1/2 cup OPA Bleu Cheese Dressing, 1 garlic clove, 1 tsp dijon mustard, 1 tsp worcestershire, 3 tbsp lemon juice and 2 tbsp olive oil and blend thoroughly.
  4. Salad-Add dressing to kale, toss and add 1/4 cup shredded parmesan cheese and toasted garbanzo beans. Enjoy!
