Parmesan Zucchini Chips & Mustard Sauce

You say parmesan, I say, “I’m in!” Anything parmesan has my vote. I’ve made these Parmesan Zucchini Chips for years and I’m so excited to finally share them with you! They’re my favorite substitute for more starchy carbs like a heap of potatoes, rice or pasta.A few bread crumbs…eh, no biggie. Every bite is savory and while it tastes like parmesan fries going down, you know you’re making a healthier choice because: zucchini over potatoes + baked over fried. Win!

These little slices of healthy heaven are then elevated to the next level of “oh my gah!” when you add the mustard dipping sauce. Which, I might add, is super healthy and only two ingredients. It not only cools down your zucchini bite but it adds a little hit of protein at the same time, since it’s made using greek yogurt.

One of my favorite things to do is experiment with food I’m craving and turn it into a healthier version that I can enjoy just the same! Like my take on a Healthier Peanut Butter and Jelly Sandwich or my Blackbean Espresso Brownies.

I love to eat and because it’s so important to me to be both healthy and balanced in all areas of life! I love the freedom to create a new twist that achieves both.

There are tons of alternatives and honestly, eating less processed food overall has been one of the best decisions around food I’ve ever made. I try to mostly stick to whole foods, lots of plants and a gallon of water everyday. Even though these have some cheese and panko crumbs on them, it’s all about balance! It’s the perfect yummy last minute throw in the oven side dish for din. Make it for your family tonight, they are going to love them!
