Rosemary Salted Red Potatoes

When I started the 30 day Vegetarian Challenge (recap here) I had to find a balance between enough protein and not over-consuming too many carbohydrates. I started by making soups packed full of vegetables and using potatoes and lentils as the thickening agent. I love root vegetables like potatoes because they ground you. I used to eat white rice with chicken, before the challenge, and knew I needed to add variety into my diet so in came the potatoes. Red potatoes are my favorite and this is one of the ways I prepare them. This is a super simple recipe, enjoy!


  • Organic red potatoes
  • Dry or fresh rosemary
  • Salt & pepper


Preheat oven to 350 degrees. Spray a cookie sheet pan with coconut oil spray. Wash potatoes then cut into whatever shape you like (diced or sliced) and place on a backing pan. Spray the potatoes with a little coconut oil spray then sprinkle rosemary, salt and pepper on top. Bake for 20 minutes or until slightly brown.

Optional: you may turn potatoes over if you would like both sides browned. Turn after 10 minutes.
