Savory, Southwestern Chicken Tortilla Soup

Southwestern. Chicken Tortilla. Soup. All these things sound perfect for the weather right now. Fierce Forward Ambassador, Melissa Stevens would make this soup with her son and they both raved how delicious it is! Enjoy this Southwestern Soup as is or add a kick of heat by adding red pepper to your bowl (something I do with all my soups!) and diced avocado.

  • 4 diced, cooked chicken breasts
  • 48 oz fat free chicken broth
  • 1 cup cooked wild rice
  • 1 (14.5 oz) can diced southwest style tomatoes
  • 1 (4oz) diced green chilies
  • 1 (7oz) can Mexicorn
  • 1 can black beans (optional)
  • 1/4 red bell pepper, and 1/4 yellow bell pepper, diced
  1. Sauté chicken first. Put all ingredients in a large pot. Bring to a boil. Simmer for 1 hour.
  2. Can add 2 cups 1% cottage cheese to make a creamy broth and boost protein.
  3. Great to top with a little light shredded cheese, a dollop of light sour cream, and crush a few baked tortilla chips Great to double the batch so you can have leftovers for lunches during the week!!
