For me, going out to breakfast used to be one of my favorite things to do on Sundays! Sitting there perusing the menu trying to decide between sweet or salty, was such a difficult choice. Pancakes or a feta cheese omelet? Well, those days are behind me now and so coming up with a healthy breakfast egg sandwich was on my mind!
After our Lake House trip, I had European Multigrain Bread leftover. THE BEST FLAVOR. I have a big workout coming up today so I wanted to get healthy carbs, fats and proteins all in one.
I can honestly say I’d rather eat an avocado over cheese because of how each makes me feel. Avocado is so good and I don’t ever feel a heavy feeling afterwards like I do when eating cheese. I think this is a great way to get some healthy fats in vs. going for the cheese on an omelet.
Introducing a healthy Breakfast Sandwich you can gobble up in the morning or even eat cold if you’re that bold!
It’s simply eggcellent.
Here’s how you create it:
1 piece European Bread, spray with olive oil spray and put in 350degree preheated oven until toasted to your liking.
cook 2 eggs and open yolk or keep it unopened if you like a surprise in your bite
thinly slice 1/4 of an avocado
Once bread is toasted, top with avocado, then egg and dash of pepper.
I also top mine with Srirachi sauce! Enjoy!
